Preserved pumpkin

Measure Ingredient
400 grams Sugar
32 Floz water
500 millilitres Lemon juice
1 tablespoon Caraway seeds
5 Sprigs sage
1 small Pumpkin

Cut pumpkin into cubes and prick with a fork. Boil all ingredients together.

Simmer until the mixture becomes a syrup. Pack the pumpkin into sterilised jars. Pour over the syrup.
