Measure | Ingredient |

1½ tablespoon | Butter or margarine |
2 tablespoons | All-purpose flour |
1 teaspoon | Sugar |
1 teaspoon | Salt |
1 teaspoon | Dry mustard |
\N \N | Few grains Cayenne pepper |
1 \N | Egg; slightly beaten |
¾ cup | Skimmed milk |
¼ cup | Vinegar |
Melt butter or margarine in top of double boiler. Mix dry ingredients; add egg, melted butter or margarine, and milk, then very slowly add the vinegar. Cook until mixture thickens. Cool. Yield: 1-¼ cups.
