Coconut cookies (crispy type)

Yield: 1 Servings

Measure Ingredient
2 cups Sugar
1 cup Butter
1 cup Ground coconut (chop well in
\N \N Blender or food processor)
2 teaspoons Baking powder
4 cups Flour (unsifted)
2 larges Eggs (or 3 small)

Mix all ingredients together. If too stiff add another egg (it does need to be stiff enough to roll out after chilling). Chill dough in freezer or refrigerator. Roll thin (⅛ inch), cut out cookies. Bake at 400 degrees 5-7 minutes.
