Yield: 24 cookies
|1¼ cup||Sifted all-purpose flour|
|1 teaspoon||Baking powder|
|½ cup||Granulated sugar|
|½ cup||Brown sugar, firmly packed|
|½ cup||Butter or margarine, soft|
|1 cup||Quaker Oats, uncooked (quick or old-fashioned)|
|1 cup||Flaked or shredded coconut|
Sift together flour, baking powder, soda and salt into bowl. Add sugars, butter, egg and vanilla. Beat until smooth, about 2 minutes.
Stir in oats and coconut.
Shape to form 1-inch balls. Place on greased cooky sheets. Bake in preheated moderate oven (350 F.) 12 to 15 minutes.
