Coco loco crustless pie

Yield: 1 Servings

Measure Ingredient
3 Eggs or 3/4 cup thawed no-cholesterol substitute
1½ cup Skim milk
1 teaspoon Vanilla
6 tablespoons Biscuit mix
3 tablespoons Sugar
9 tablespoons Dried coconut flakes
No-calorie sweetener to taste; optional

Combine ingredients, except coconut and no-calorie sweetner in blender or food processor (using steel blade). Cover; blend smooth. Pour into 8-inch round or square nonstick cake pan which has been sprayed with cooking spray. Sprinkle the surface evenly with coconut. Bake in preheated 350 oven 35 to 40 minutes, until pie is set and topping is golden. Cut in wedges or squares to serve, warm or chilled. Sprinkle top lightly with no-calorie sweetener before serving if desired.
