Clam-stuffed fish fillets

2 | pounds | Fish fillets |
½ | cup | Butter |
¼ | cup | Onion; chopped |
¼ | cup | Celery; chopped |
4 | cups | Fresh bread crumbs |
2 | cans | (6.5 oz) minced clams; drained, reserve liquid |
2 | tablespoons | Lemon juice |
Salt and pepper to taste |
Directions
Preheat oven to 375 F.
Arrange half of the fish fillets in buttered baking dish.
Melt ¼ cup butter in frying pan. Add onion and celery; saute until soft. Stir in bread crumbs until butter is soaked up. Cook over medium heat, continuing to toss bread crumbs, until crumbs are slightly browned. Add clams, lemon juice, and enough reserved clam liquid to moisten stuffing.
Season stuffing with salt and pepper; spoon stuffing over fish fillets. Cover with remaining fillets.
Melt remaining butter in small saucepan. Brush top layer of fillets with melted butter. Bake for 15 minutes, or until fish is done.
Remove from oven and serve in baking dish.
