Stuffed flounder

Ingredients

1 cup Onion, minced
cup Celery, minced
3/16 bunch Parsley, chopped
2 tablespoons Flour
1 cup Dry white wine
½ cup Lump crabmeat
Salt & pepper, to taste
18 eaches Peeled, boiled shrimp
½ cup Minced green onion
3 cloves Garlic, minced
½ pounds Oleo
1 cup Milk
½ cup Chopped boiled shrimp
cup Bread crumbs
6 eaches Flounders

Directions

Saute onion, shallots, celery, garlic and parsley in oleo. Add flour and blend well. Gradually stir in milk and wine, cooking until thickened.

Add chopped shrimp and crabmeat and thicken further with bread crumbs. Season to taste. Split each flounder and fill with this dressing. Top each with 3 whole shrimp. Place under broiler abt. 20 min. or until fish is cooked through.
