Chocolate cupcakes (healthy choice)

Yield: 12 servings

Measure Ingredient
1½ cup All-purpose flour
½ cup Sugar
¼ cup Unsweetened cocoa
1 teaspoon Baking soda
½ teaspoon Salt
½ cup Unsweetened orange juice
⅓ cup Water
3 tablespoons Vegetable oil
1 tablespoon White vinegar
1 teaspoon Vanilla extract
⅓ cup Semi-sweet chocolate mini-
. morsels
1 tablespoon Powdered sugar

Combine flour, sugar, cocoa, baking soda, and salt in a large bowl; make a well in center of mixture.

Combine juice and next 4 ingredients; add to dry ingredients, stirring mixture just until moistened. Fold in chocolate mini-morsels.

Spoon into foil- or paper-lined muffin pans, filling two-thirds full.

Bake at 375 degrees for 12 minutes or until a wooden pick inserted in center comes out clean. Remove from pans immediately; cool on a wire rack. Sprinkle with powdered sugar.
