A classic Japanese grill. For a light summer supper, serve with your favorite salad. Although the instructions below are for a broiler, the chicken is even better cooked over a charcoal grill. Cooking time may vary slightly
1. Arrange chicken, skin side up in a single layer in a shallow dish.
2. Combine soy sauce, sherry, sugar, garlic, and ginger; pour over chicken.
Marinate in refrigerator, turning once or twice, for 2 hours.
3. Preheat broiler. Remove chicken from marinade. Spray rack in broiler pan with vegetable spray; place chicken on rack. Broil 5 to 6 inches from heat, turning once and basting with marinade, about 10 minutes.
