Chicken squares

Yield: 1 Servings

Measure Ingredient
3 cups Diced cooked chicken
1 cup Cooked rice
2 cups Soft crumbs
½ cup Diced celery
¼ cup Chopped pimento
4 \N Beaten eggs
2 teaspoons Salt
¼ teaspoon Poultry seasoning
2 cups Chicken broth
1 can Cream of mushroom soup
⅓ cup Milk

Combine chicken, rice, crumbs, celery and pimento. To the beaten eggs, add salt, seasoning and broth. Mix thoroughly and stir into chicken mixture.

Bake in a greased square glass baking dish at 350 degrees for 1 hour. A few minutes before taking out of the oven, cover with browned bread crumbs. Cut into squares and serve with mushroom sauce over top.

MUSHROOM SAUCE: mix together ⅓ cup of milk and 1 can of cream of mushroom soup. Heat and serve over chicken squares.
