Chicken pizzarella

Ingredients

| 1 | tablespoon | Olive oil |
| 2 | tablespoons | Onion; finely chopped |
| 1 | cup | Mushrooms; thickly sliced |
| 1 | Clove (small) garlic; minced | |
| ½ | teaspoon | Oregano |
| 1 | can | (8-oz) tomato sauce |
| Pepper to taste | ||
| 8 | Chicken breast halves; boneless | |
| 1 | cup | Sliced Mozzarella cheese |
Directions
Heat oven to 350 degrees. In a small saucepan heat oil; add onion, mushrooms, garlic and oregano. Cook over low heat, stirring occasionally, until onion is soft. Stir in tomato sauce and pepper. Place chicken in a 2-quart baking dish. Cover with sauce and bake, uncovered, 35 minutes. Put mozzarella on top and continue baking 5 more minutes or until cheese is bubbling. Serve over linguini. Serves 8.
