1 tablespoon | Olive oil |
2 tablespoons | Onion; finely chopped |
1 cup | Mushrooms; thickly sliced |
1 \N | Clove (small) garlic; minced |
½ teaspoon | Oregano |
1 can | (8-oz) tomato sauce |
\N \N | Pepper to taste |
8 \N | Chicken breast halves; boneless |
1 cup | Sliced Mozzarella cheese |
Heat oven to 350 degrees. In a small saucepan heat oil; add onion, mushrooms, garlic and oregano. Cook over low heat, stirring occasionally, until onion is soft. Stir in tomato sauce and pepper. Place chicken in a 2-quart baking dish. Cover with sauce and bake, uncovered, 35 minutes. Put mozzarella on top and continue baking 5 more minutes or until cheese is bubbling. Serve over linguini. Serves 8.
