Chicken noodle rice

Yield: 4 Servings

Measure Ingredient
2 teaspoons Canola oil
2 cups Chicken chunks; 1 1/2\" cubes
2 packs Ramen style chicken noodles; 3 oz. each
2 cups Frozen green peas
2 cups Water
1 teaspoon Minced garlic
½ teaspoon Dried thyme
3 cups Cooked white rice
\N 1 min.

Heat oil in a large non-stick skillet. Add chicken and stir-fry 2 mins.

until white on all sides. Break up noodles and stir into skillet with peas, water, garlic and thyme. Cover and simmer for 4-5 mins. or until chicken is opaque. NOTES : I usually have 3 cup packages of rice in the freezer. Just thaw and you have the start on a fast meal.
