Carrot salad with apples and cinnamon

2 | eaches | Apples, peeled and coarsely chopped |
1 | tablespoon | Frozen apple juice concentrate |
3 | tablespoons | Fresh lemon juice |
1 | teaspoon | Parsley |
½ | teaspoon | Cinnamon |
Directions
Toss all ingredients together and chill. Serve on lettuce leaves.
