Carrot salad with apples and cinnamon

Ingredients

| 4 | eaches | Carrots, thinly sliced (2 cups) |
| 2 | eaches | Apples, peeled and coarsely chopped |
| 1 | tablespoon | Frozen apple juice concentrate |
| 3 | tablespoons | Fresh lemon juice |
| 1 | teaspoon | Parsley |
| ½ | teaspoon | Cinnamon |
Directions
Toss all ingredients together and chill. Serve on lettuce leaves.
