Caribou sausage #3

Measure Ingredient
4 pounds Caribou
2 pounds Lean pork
1 large Onion; chopped
2 pounds Potatoes; grated
2 tablespoons Salt
½ teaspoon Pepper
1 teaspoon Allspice
½ teaspoon Cayenne and other spices to taste
\N \N Sausage casings

Grind together all the meats with the onion. Next mix the potatoes with the meats. Add spices and mix thoroughly.

Prepare as for Caribou Sausage #1.
