Cajun butter beans

Measure Ingredient
1 pounds Fresh butter beans
½ pounds Salt meat; parboiled and diced
1 tablespoon All-purpose flour
3 tablespoons Oil
1 large Onion; chopped
2 \N Cloves garlic; chopped fine
2 teaspoons Sugar
\N \N Salt and pepper to taste
\N \N Water

Make a roux with oil and flour. Add meat and onions; Saute until onions and meat are lightly browned. Add butter beans, garlic and sugar; cook for 15 minutes, stirring. Lower heat; add water to beans. Cover and cook for 1 hour, approximately.
