Buffalo chicken pizza

Yield: 8 Servings

Measure Ingredient
1 pack Refrigerated pizza dough
1 teaspoon Olive oil
¼ cup Butter; melted
¼ cup Hot cayenne pepper sauce
2 cups Diced cooked chicken; (about 1/2 pound)
½ cup Chopped celery
1 cup Crumbled blue cheese

Preheat the oven to 450F. Open the tube and unroll the pizza dough. Using your fingertips or the heel of your hand, spread the dough to cover the bottomof a 12-to-14-inch pizza pan that has been coated with non-stick vegetable spray. Push the dough up to the edge of the pan, forming a rim.

If the dough is too sticky, dust it and your hands lightly with flour. With a fork, prick the dough 15 to 20 times. Brush with the oil. In a medium-sized bowl, combine the butter and hot pepper sauce; mix well. Add the chicken and celery and toss to coat well. Spread evenly over the prepared base, then sprinkle with the blue cheese. Bake for 10 to 12 minutes, or until the crust is crisp and brown. Cut and serve.

NOTE: Refrigerated pizza dough is available in the dairy section of your supermarket next to the refrigerated biscuits. Or, if your prefer, use an already prepared pizza crust and then just top it and bake according to the above directions. And make sure you use hot cayenne pepper sauce and not hot pepper sauce - yes, there is a difference! BUSTED BY MEG ANTCZAK 1/21/98
