Yield: 4 Servings
|4 \N||Catfish fillets; (6 oz. each)|
|¼ cup||Butter or margarine; melted|
|4 teaspoons||Magic seasoning blends seafood magic; or|
|1 teaspoon||Salt; and|
|1 teaspoon||Onion powder; and|
|1 teaspoon||Ground red pepper; and|
|½ teaspoon||Garlic powder; and|
|\N \N||Lemon wedges|
|\N \N||Hushpuppies; see recipe|
1. Brush both sides of fish with butter, then coat both sides with seasonings.
2. Heat 10-inch cast-iron skillet over medium-high heat until smoking, 3 to 5 minutes. Add 2 fillets and cook until just opaque at center, about 2 minutes per side. Keep warm in oven and repeat with remaining fillets.
Serve with lemon wedges and Hushpuppies.
