Bran muffins #4

Yield: 12 Servings

Measure Ingredient
1 cup Flour (I use all white but the original recipe called for 1/2 white and 1/2 whole wheat)
2 teaspoons Baking powder
½ teaspoon Baking soda
½ teaspoon Cinnamon
2 cups 100% bran (I use All Bran cereal)
1¼ cup Non-fat milk
⅓ cup Firmly packed brown sugar
1 \N Egg equivalent (I use Egg Beaters)
½ cup Applesauce
½ cup Dried cranberries or raisins

Here is a Bran Muffin recipe I originally got from this list about 2 years ago. It is the best muffin recipe I've tried without added fat! Heat oven to 400 degrees. Mix cereal, milk and sugar in bowl; let stand 5 minutes. Stir in egg equivalent and applesauce. Add dry ingredients.

Spray muffin pan with no-stick spray and fill ⅔ full. Bake in oven 18-20 minutes. Makes 12 muffins.
