Yield: 6 Servings
|2 packs||Instant chicken-flavored broth mix|
|1 tablespoon||Lemon juice; fresh, not bottled|
|1 small||Bay leaf|
|2 tablespoons||Golden raisins (Sultanas)|
|6 ounces||Uncooked brown rice|
Combine all ingredients EXCEPT RICE in a 3 quart saucepan. Bring to a boil over med-high heat. Stir in rice; reduce heat to low, cover & simmer until all liquid is absorbed, 50-60 minutes. (Check after 45-50 minutes; add boiling water if rice seems too dry). Remove & discard bay leaf before serving.
