Bombay rice pilaf

Yield: 6 Servings

Measure Ingredient
2½ cup Water
2 packs Instant chicken-flavored broth mix
1 tablespoon Lemon juice; fresh, not bottled
1 tablespoon Margarine
1 small Bay leaf
¼ cup Plus
2 tablespoons Golden raisins (Sultanas)
6 ounces Uncooked brown rice

Combine all ingredients EXCEPT RICE in a 3 quart saucepan. Bring to a boil over med-high heat. Stir in rice; reduce heat to low, cover & simmer until all liquid is absorbed, 50-60 minutes. (Check after 45-50 minutes; add boiling water if rice seems too dry). Remove & discard bay leaf before serving.
