Rice vegetable pilaf

Ingredients

1⅓cupWater
1teaspoonChicken-flavored bouillon
Granules
½cupLong-grain rice -- uncooked
cupCarrot -- coarsely shredded
½cupFresh parsley, chopped
cupScallion -- thinly sliced
¼teaspoonPepper
¼cupToasted pecans,chopped

Directions

Combine water and bouillon granules in a saucepan, bring to a boil. Add rice, cover, reduce heat, and simmer 20 minutes. Remove from heat, and let stand, covered, 5 minutes. Add next 4 ingredients, stir well. Place over ow heat, cover and cook 5 minutes. Sprinkle with pecans.
