Black bean casserole ole

Yield: 6 servings

Measure Ingredient
1 tablespoon Olive oil
1 cup Onions; chopped
¾ cup Cornmeal, yellow, + 2 tbs
2 teaspoons Chili powder
1¾ cup Soymilk, lite
1 pounds Beans, black, canned; rinsed and drained
1 pounds Corn, whole kernel, canned; drained
1 pounds Tomatoes, stewed, canned
4 ounces Chilies, green, canned; chopped
¼ cup Nutritional yeast cheesy sauce

Preheat oven to 350.

Lightly oil an 8-inch square baking pan or spray with a nonstick cooking spray.

In a large bowl, combine all ingredients, except cheesy sauce. Mix well. Place in prepared pan. Drop cheesy sauce on top by spoonfuls.

Bake, uncovered, 45 minutes.
