Beet perfection salad

Yield: 3 servings

Measure Ingredient
2 tablespoons Unflavored gelatin
½ cup Sugar
½ teaspoon Salt
2 cups Shoestring beets
2 cups Cold water
½ cup Vinegar
2 teaspoons Prepared horseradish
2 cups Finely chopped cabbage

In a saucepan combine gelatin, sugar, and salt. Drain beets, reserving liquid (1 cup). Blend beet liquid into gelatin mixture; stir over medium heat till gelatin is dissolved. Remove from heat; add water, vinegar and horseradish. Chill till partially set; fold in drained beets and cabbage. Turn into 5½ cup ring mold; chill till firm.
