Beet & walnut salad

Ingredients

3Beets; cooked and peeled
2Tart apples; peeled & cored
½cupFeta or goat cheese
½cupWalnuts
cupThinly sliced scallions
cupBasic vinaigrette dressing

Directions

Cube the beets and the apples and mix together in a bowl wiht the cheese, the walnuts and the scallions. Drizzle dressing over and stir to coat. Serve on a bed of butterhead lettuce.
