Beet and walnut salad

Yield: 1 Salad

Measure Ingredient
3 \N Beets; cooked and peeled
2 \N Tart apples; peeled & cored
½ cup Feta or goat cheese
½ cup Walnuts
⅓ cup Thinly sliced scallions
⅓ cup Basic vinaigrette dressing

Cube the beets and the apples and mix together in a bowl wiht the cheese, the walnuts and the scallions. Drizzle dressing over and stir to coat.

Serve on a bed of butterhead lettuce.
