Measure | Ingredient |

3 \N | Beets; cooked and peeled |
2 \N | Tart apples; peeled & cored |
½ cup | Feta or goat cheese |
½ cup | Walnuts |
⅓ cup | Thinly sliced scallions |
⅓ cup | Basic vinaigrette dressing |
Cube the beets and the apples and mix together in a bowl wiht the cheese, the walnuts and the scallions. Drizzle dressing over and stir to coat.
Serve on a bed of butterhead lettuce.
