Mache and beet salad

Yield: 1 Salad

Measure Ingredient
2 cups Mache
4 \N White or golden beets cooked, peeled & chopped
1 teaspoon Chopped lovage or parsley
2 tablespoons Balsamic vinegar
5 tablespoons Olive oil
2 \N Eggs, hard-boiled
½ cup Home made croutons

In a salad bowl combine lovage or parsley, vinegar and oil. Add beets, toss to coat and marinate for 1 hour. Add mache, toss, garnish with eggs and croutons.
