Mache and beet salad

4 | White or golden beets cooked, peeled & chopped | |
1 | teaspoon | Chopped lovage or parsley |
2 | tablespoons | Balsamic vinegar |
5 | tablespoons | Olive oil |
2 | Eggs, hard-boiled | |
½ | cup | Home made croutons |
Directions
In a salad bowl combine lovage or parsley, vinegar and oil. Add beets, toss to coat and marinate for 1 hour. Add mache, toss, garnish with eggs and croutons.
