Mache and beet salad

Ingredients

| 2 | cups | Mache |
| 4 | White or golden beets cooked, peeled & chopped | |
| 1 | teaspoon | Chopped lovage or parsley |
| 2 | tablespoons | Balsamic vinegar |
| 5 | tablespoons | Olive oil |
| 2 | Eggs, hard-boiled | |
| ½ | cup | Home made croutons |
Directions
In a salad bowl combine lovage or parsley, vinegar and oil. Add beets, toss to coat and marinate for 1 hour. Add mache, toss, garnish with eggs and croutons.
