Mache and beet salad

4White or golden beets cooked, peeled & chopped
1teaspoonChopped lovage or parsley
2tablespoonsBalsamic vinegar
5tablespoonsOlive oil
2Eggs, hard-boiled
½cupHome made croutons

Directions

In a salad bowl combine lovage or parsley, vinegar and oil. Add beets, toss to coat and marinate for 1 hour. Add mache, toss, garnish with eggs and croutons.
