Beef and vegetable medley

Ingredients

1poundsSteak, sirloin boneless; cut in strips
½teaspoonSalt
½teaspoonBlack pepper
1Garlic clove; minced
1tablespoonOil, vegetable
1cupRed pepper strips
1cupMushrooms, fresh; sliced
1cupZucchini; sliced
7ouncesCorn; drained
cupGreen onions; sliced
3cupsRice, brown; cooked

Directions

Season beef with salt and pepper. Brown beef with garlic in oil in large skillet over high heat. Stir in red pepper, mushrooms, zucchini, corn and onions; stir-fry 3 to4 minutes or until vegetables are tender crisp. Stir in rice; heat thoroughly.
