Basil cornbread

Yield: 16 servings

Measure Ingredient
1 cup Cornmeal
1 cup Unbleached flour
2 tablespoons Granulated sugar
4 teaspoons Baking powder
¾ teaspoon Salt
¼ teaspoon Black pepper
1 Egg white -- whipped
1 cup Skim milk -- at room
Temperature
¼ cup Applesauce -- at room
Temperature
3 tablespoons Basil

Preheat oven at 350. Prepare a 8" square baking pan with cooking spray and flour. In a mixing bowl, combine cornmeal. flour, sugar, baking powder, salt, and pepper. In another mixing bowl, combine egg white, milk, applesauce, and basil. Mix dry ingredients with wet ingredients just until moistened. Spread batter into prepared pan.

Bake for 18 to 22 minutes, or until top is light golden.
