Banana-oat bread

Ingredients

½cupAM Oat Bran
½cupAM Oat Flakes
¾cupHot milk, soymilk or water
2Ripe bananas; mashed
½cupHoney
¼cupUnrefined vegetable oil
2Egg whites beaten until fluffy
cupAM Whole Wheat Pastry Flour
1tablespoonNon-alum baking powder
½teaspoonCinnamon
¼cupChopped pecans

Directions

Combine first three ingredients, set aside to cool, combine mashed bananas, honey, vegetable oil, beaten egg whites, then stir into oat mixture. Mix dry ingredients together and stir into oat mixture. Pour batter into an oiled bread pan. Bake at 350 F. for 1 hour or until done.
