Banana-nut bread

Measure Ingredient
2½ cup All-Purpose Flour -- sifted
1 tablespoon Baking Powder
½ teaspoon Salt
¼ cup Butter -- softened
1 cup Sugar
1 Egg -- beaten
1 cup Bananas -- mashed ripe
1 tablespoon Lemon Rind -- grated
½ cup Milk
1 cup Walnuts -- chopped

Preheat oven to 350 F. Sift dry ingredients together. Cream butter, gradually adding sugar, then the egg. Beat until smooth. Add bananas, lemon rind, and milk. Add flour mixture. Stir until blended. Then add nuts. Pour into a greased 9 x 5 x 3-inch loaf pan. Bake for 1 hour.

Cool for 10 mins in the loaf pan, then remove and cool completely on a wire rack. This bread is even better the 2nd day. Yield: 1 loaf.
