| 1 | cup | All-purpose flour |
| 1 | tablespoon | Baking powder |
| 1 | teaspoon | Sugar |
| 1 | teaspoon | Salt |
| 1 | teaspoon | Pepper |
| 2 | larges | Eggs, lightly beaten |
| ¾ | cup | Milk |
| ¼ | cup | Vegetable oil |
| ½ | cup | Chopped onion |
Directions

Combine first 6 ingredients in a large bowl. Make a well in the center and set aside. Combine the remaining ingredients. Add to dry mixture. Stir until moistened. Coat miniature- muffin pans with cooking spray. Spoon 1 tablespoon batter into each cup. Bake at 425°F for 15 minutes. Remove from pans and serve immediately.
