Baked fresh fish

Ingredients

Cooking oil | ||
1 | pounds | Fish filets |
Crazy Jane salt | ||
Black pepper; freshly ground | ||
Dill weed; crushed | ||
Butter | ||
3 | tablespoons | Butter or margarine |
1 | teaspoon | Tarragon |
2 | teaspoons | Capers with juice |
2 | tablespoons | Lemon juice |
Directions
SAUCE
Spray or brush cookie sheet with cooking oil. Place filets on greased surface and sprinkle with salt, pepper, dill weed and dots of butter. Bake at 375ø for 6 to 8 minutes. Turn and bake another 6 to 8 minutes or until fish is flaky. To make sauce melt the butter, tarragon, capers and lemon juice together. Serve sauce over warm fish. Yield: 4 servings.
