1 pounds | Fish filets |
\N \N | Crazy Jane salt |
\N \N | Black pepper; freshly ground |
\N \N | Dill weed; crushed |
\N \N | Butter |
3 tablespoons | Butter or margarine |
1 teaspoon | Tarragon |
2 teaspoons | Capers with juice |
2 tablespoons | Lemon juice |
SAUCE
Spray or brush cookie sheet with cooking oil. Place filets on greased surface and sprinkle with salt, pepper, dill weed and dots of butter. Bake at 375ø for 6 to 8 minutes. Turn and bake another 6 to 8 minutes or until fish is flaky. To make sauce melt the butter, tarragon, capers and lemon juice together. Serve sauce over warm fish. Yield: 4 servings.
