Bacon and cheddar pancakes

Ingredients

1cupCornmeal
cupSugar
1teaspoonSalt
1teaspoonBaking soda
3largesEggs
2cupsButtermilk
½cupPlain yogurt
¼cupUnsalted butter; melted
2cupsMild cheddar cheese; grated
1poundsCooked bacon; crumbled

Directions

1. In large bowl, whisk together flour, cornmeal, sugar, salt and baking soda.

2. In another bowl, whisk together eggs, milk, yogurt and butter. Whisk into flour mixture just until combined.

3. Heat griddle over med heat (350F). Preheat oven to 200F if you want to hold pancakes.

4. Pour ¼ cup of batter, forming 4" rounds and sprinkle 1 tbsp of cheese and bacon onto each pancake. Cook until golden, 1-2 mins on each side.

Serve with cheese and syrup.
