Bacon & peanut butter muffins

Yield: 12 servings

Measure Ingredient
2 cups Flour
1 tablespoon Baking powder
1 tablespoon Sugar
½ teaspoon Salt
1 Egg
1 cup Milk
2 tablespoons Bacon fat or butter; melted
3 slices Bacon; cooked, finely chopped
4 tablespoons Peanut butter; approx.

Yield: 12 muffins

Mix thoroughly flour, baking powder, sugar, and salt. In a medium-size bowl beat the egg; add milk, melted fat, and chopped bacon. Stir in the flour mixture, but do not beat; mixture should be just moistened. Pour a little batter into each well-greased muffin tin, then drop in about ⅓ teaspoon of peanut butter before filling tins ¾ full. Bake in a preheated 400 F oven for 20 to 25 minutes.
