Apricot glazed sweet potatoes

Yield: 8 servings

Measure Ingredient
6 eaches Medium sweet potatoes, cooked and sliced
1 can Apricots(16oz), reserve 1 cup syrup
½ cup Pecans
1½ tablespoon Cornstarch
¼ teaspoon Salt
⅛ teaspoon Cinnamon
1 teaspoon Shredded orange peel
2 tablespoons Butter
¼ cup Brown sugar

Arrange sweet potatoes in a buttered 9x13 inch baking dish. Combine brown sugar, cornstarch, salt, cinnamon, orange peel and butter; add apricot juice and bring to a boil. Remove from heat and pour over sweet potatoes. Arrange apricots and pecans over sweet potatoes. Bake at 350 degrees for 25 minutes.
