Apricot glazed sweet potatoes

6eachesMedium sweet potatoes, cooked and sliced
1canApricots(16oz), reserve 1 cup syrup
½cupPecans
tablespoonCornstarch
¼teaspoonSalt
teaspoonCinnamon
1teaspoonShredded orange peel
2tablespoonsButter
¼cupBrown sugar

Directions

Arrange sweet potatoes in a buttered 9x13 inch baking dish. Combine brown sugar, cornstarch, salt, cinnamon, orange peel and butter; add apricot juice and bring to a boil. Remove from heat and pour over sweet potatoes. Arrange apricots and pecans over sweet potatoes. Bake at 350 degrees for 25 minutes.
