Applesauce raisin cake (vegan)

Yield: 1 servings

Measure Ingredient
2 cups Whole wheat flour
1 tablespoon Baking powder
teaspoon Baking soda
1 tablespoon Cinnamon
1 cup Soy or rice milk
1 cup Applesauce
2 smalls Overripe bananas
2 smalls Apples, diced, no need
½ teaspoon Nutmeg
¼ teaspoon Cloves
½ teaspoon Salt
1 cup Raisins
½ cup Chopped pitted dates
3 teaspoons EnerG egg replacer
6 tablespoons Water to peel




Prepare a 9x13 pan with veg spray. Preheat oven to 375.

Toss the apples into the flour mix, pour in the blended stuff, mix gently until mixed. Pour into prepared pan, smooth out top, and sprinkle nuts all over (if desired). Bake 30 mins, until sides pull away from pan and it passes toothpick test.

Lee's note: this is pretty sweet as is, but if you have a real sweet toth, add some maple syrup in place of the 6T water, or use vanilla flavored soy milk.
