Applesauce fruitcake

Ingredients

cupSweetened applesauce
½cupShortening
1cupSugar
1pack(8 ozs.) pitted dates; sliced
4ouncesChopped pecans
½poundsRed cherries; halved
½poundsGreen cherries; halved
2cupsRaisins
cupAll-purpose flour
2teaspoonsBaking soda
1tablespoonCinnamon
¼teaspoonAllspice
½teaspoonSalt
1 fruitcake

Directions

Grease and flour a tube pan and set aside. Combine applesauce, shortening and sugar together in a saucepan. Bring to a boil; boil for 5 minutes, stirring occasionally. Combine fruit and nuts in a large bowl, adding flour, soda, salt and spices and stir together. Fold in cooked mixture until well moistened. Pour into the prepared pan and bake at 275 degrees for 2 hours or until done.

Cool on a wire rack for 10 minutes. Remove from pan and cool completely.
