Applesauce raisin muffins

Yield: 18 Servings

Measure Ingredient
4 Eggs
2 cups Sugar
1½ cup Oil
1⅔ cup Applesauce
1 teaspoon Salt
3 cups Flour
1 tablespoon Cinnamon
2 teaspoons Baking powder
2 teaspoons Baking soda
2 cups Raisins

Beat eggs slightly, add sugar, oil & applesauce & beat thoroughly. Add dry ingredients & blend until just combined. Stir in raisins. Spoon into prepared pans & sprinkle with brown sugar. Bake at 375øF for 15-20 mins.

Makes 18-24 good size muffins.
