Apple-raisin cake

Yield: 1 Servings

Measure Ingredient
2 \N Eggs
1½ cup Sugar
1 cup Oil
2 cups Flour
2 teaspoons Vanilla
1 teaspoon Salt
1 teaspoon Baking soda; (bicarbonate)
½ cup Raisins; up to 1
1 cup Chopped nuts; (optional)
4 larges Apples; peeled and diced.

Recipe by: Merle Gutkin (my sister in London) (Preheat oven to 325 deg. F.)

1. Beat eggs, sugar & oil.

2. Add baking soda, flour, salt.

3. Stir in pre-soaked raisins and apples. (soak raisins in boiling water or liquer of your choice for about ½ hour, then drain.) 4. Pour into greased, shallow pan, bake at 325 deg. F. 45 minutes - 1 hour.
