Apple oatcakes

¾ | cup | Oatmeal |
2 | cups | Hot water |
¾ | cup | Butter |
2 | Chopped; (unpeeled) yellow or green apples (add just before cooking), up to 3 | |
1½ | cup | Brown sugar |
3 | Eggs | |
2 | cups | Flour |
1 | cup | Wheat germ |
1½ | teaspoon | Cinnamon |
1½ | teaspoon | Baking soda |
1½ | teaspoon | Baking powder |
⅛ | teaspoon | Vanilla |
⅛ | teaspoon | Nutmeg |
1 | cup | Heavy cream; (do not use ultra-pasteurized) |
1 | tablespoon | Buttermilk |

CREAM FRAICHE
Mix & Cook 20 minutes:
Mix oatmeal mix ingredients.
Beat together sugar mix.
Add the rest to cooked oatmeal mixture along with brown sugar and eggs.
Cook on griddle like pancakes, batter will be thick, spread around a little with spoon.
Serve with cream fraiche, chopped walnuts and maple syrup.
Cream Fraiche:
Mix 1 cup heavy cream (do not use ultra-pasteurized) and 1 T. buttermilk.
Let stand, uncovered, at room temp. for 24 hours then refrigerate.
