Apple dessert pancake

| 1 | teaspoon | Cinnamon |
| 2 | tablespoons | Unsalted Butter |
| 1½ | Macintosh Apples -- | |
| Core/peel/slice | ||
| 3 | tablespoons | Flour |
| 1 | dash | Salt |
| 2 | Eggs Yolks | |
| 2 | Egg Whites | |
| ¼ | teaspoon | Baking Powder |
| 3 | tablespoons | Milk |
| 3 | tablespoons | Sugar |
Directions
Mix 2 tablespoons sugar and cinnamon. Melt butter in 10" iron skillet.
Swirl sugar/cinnamon mixture over all. Arrange apple slices in skillet and cook 5 minutes over low heat. Preheat oven to 400. Mix flour, salt, egg yolks, baking powder, and milk. Beat egg whites with 3 tablespoon sugar until soft peaked. Fold into flour mixture. Pour batter over apple slices and bake 10 minutes. Remove from pan by inverting on plate.
