Apple cheese spread

1cupGrated cheddar cheese -- at
Room temp
2tablespoonsBrandy or sherry
1mediumSize apple (Granny Smith --
Or the like)
¼teaspoonBlack pepper
1teaspoonDried thyme
1teaspoonDried basil
1teaspoonDried oregano

Directions

Combine the cheeses, and brandy. Beat till smooth. Peel, core, and grate the apple into the bowl. Sprinkle w/ the pepper and the herbs. Stir till combined. Spoon into a bowl (or crock), cover, and chill about an hour.

Serve on toast or crackers.
