Apple cheese pancakes

Ingredients

QuantityIngredient
1cupCottage cheese, 1/2% fat
1cupApples; coarsely grated
¼teaspoonSalt
¾cupFlour
1tablespoonHoney
1teaspoonLemon juice
1tablespoonAlmonds; chopped
½teaspoonCinnamon
4Eggs; separated

Directions

Mix all ings. but egg whites. Beat whites till stiff and fold in. Spray a griddle or skillet with cooking spray. Heat and drop batter to form pancakes. Turn when bottom is browned.
