Apple cinnamon pancakes

Measure Ingredient
1¼ cup All-purpose flour
¾ cup APPLE & CINNAMON MALT-O-MEAL; uncooked
1 tablespoon Sugar
1 tablespoon Baking powder
1 teaspoon Baking soda
1 teaspoon Salt
½ teaspoon Cinnamon
1½ cup Buttermilk or sour milk*
½ cup Applesauce
2 \N Eggs; beaten
2 tablespoons Vegetable oil

Heat griddle to 375° F. In large mixing bowl, combine flour, cereal, sugar, baking powder, baking soda, salt, and cinnamon; mix well. Add remaining ingredients, stir until moistened and batter is smooth.

For each pancake, pour ¼ cup batter onto hot griddle. Bake about 1 minute; turn and continue baking about 1 minute more.

YIELD: 16 4-inch pancakes

* One and one-half tablespoons lemon juice or vinegar plus milk to equal 1½ cups can be substituted for buttermilk.
