Zucchini-pecan bread

Measure Ingredient
3 \N Eggs
1 cup Vegetable oil
2 cups Sugar
1 tablespoon Vanilla
2 cups Zucchini; grated
2½ cup Flour
¼ teaspoon Baking powder
1 teaspoon Salt
1 teaspoon Baking soda
1 tablespoon Cinnamon
1 cup Pecans; chopped/optional

Preheat oven to 350 degrees. lightly grease and flour two loaf pans. Beat eggs until foamy. Add next four ingredients in order. Add dry ingredients.

Bake for one hour.
