Zucchini & pepper slaw

2Yellow zucchini
1Red pepper
4Green onions
1Banana pepper; slivered
1smallGarlic clove; chopped
2teaspoonsDijon mustard
½teaspoonHoney
2tablespoonsWine vinegar
cupOlive oil
Salt
Fresh ground black pepper

Directions

DRESSING

1. With shredder blade of food processor, shred zucchini into long strips or cut by hand. Reserve in bowl. Sliver red pepper and green onions and add to zucchini. Add optional banana pepper for a spicy flavour.

2. In a small bowl whisk together garlic, mustard and honey. Whisk in wine vinegar and olive oil. Mixture should be quite thick. Season with salt and pepper.

3. Just before serving, toss vegetables with vinaigrette.
