Witches' froth

Measure Ingredient
2 \N Egg whites
2 cups Apple puree or applesauce; chilled
2 tablespoons Sugar; to 4 tbs
1 teaspoon Lemon rind; grated
1 tablespoon Apricot brandy; optional
\N \N Sweet chocolate; grated

Recipe by: The Eastern European Cookbook-ISBN 0-486-23562-9 Whip egg whites until stiff. Combine with apple puree, sugar, lemon rind and brandy, folding carefully. Spoon into serving dishes and garnish with grated chocolate. Serve cold. Serves 4.

NOTES : This unusual light dessert is called boszorkany hab.
