White beans with sweet potatoes

2 | eaches | Garlic cloves, minced |
1 | tablespoon | Olive oil |
¼ | cup | White rice, uncooked |
2 | eaches | Tomatoes, chopped |
1 | cup | Great Northern beans, cooked |
1 | each | Green bell pepper, chopped |
2 | eaches | Sweet potatoes, peeled & cubed |
1 | cup | Water |
½ | teaspoon | Salt |
2 | tablespoons | Parsley, chopped |
Directions
Saute onion & garlic in oil until translucent, about 2 minutes. Add rice & saute for 3 minutes. Add the rest of the ingredients, with the exception of the parsley & bring to a boil. Reduce heat, cover & simmer until the rice is tender, about 25 minutes. Garnish with parsley & serve.
