White beans with sweet potatoes

Ingredients

1eachOnion, chopped
2eachesGarlic cloves, minced
1tablespoonOlive oil
¼cupWhite rice, uncooked
2eachesTomatoes, chopped
1cupGreat Northern beans, cooked
1eachGreen bell pepper, chopped
2eachesSweet potatoes, peeled & cubed
1cupWater
½teaspoonSalt
2tablespoonsParsley, chopped

Directions

Saute onion & garlic in oil until translucent, about 2 minutes. Add rice & saute for 3 minutes. Add the rest of the ingredients, with the exception of the parsley & bring to a boil. Reduce heat, cover & simmer until the rice is tender, about 25 minutes. Garnish with parsley & serve.
