Yield: 6 servings
|¼ cup||Extra virgin olive oil|
|½ cup||Onion; diced|
|¼ pounds||Pancetta; diced|
|1||Chicken leg; boned, skin removed, and diced|
|¾ cup||Dried Northern White Beans, soaked in water overnight and drained.|
|1 large||Tomato; peeled, seeded, and diced|
|2 cups||Chicken stock|
|½ bunch||Thyme; chopped|
|Salt and pepper (to taste)|
In a medium saucepan place the olive oil and heat it on medium high until it is hot. Add the onions and saut them for 2 to 3 minutes, or until they are tender. Add the pancetta, bratwurst, and chicken.
Saut the ingredients for 5 minutes. Add the soaked beans, tomatoes, chicken stock, bay leaves, and thyme. Simmer the beans for 1-½ hours, or until they are tender. Add the salt and the pepper, and stir them in. Remove the bay leaves and strain off the liquid (reserve it for a future use).
