What i think is traditional chutney

Ingredients

4cupsRipe mango; peeled and sliced
½cupLime; *seeded and chopped
1cupOnion; chopped
½cupFresh ginger; grated
3Cloves garlic; peeled and minced
¾cupWhite raisins
2cupsLight brown sugar
1cupApple cider vinegar
¼cupFresh orange juice
¼cupFresh lemon juice
1tablespoonMustard seed
1teaspoonCrushed red pepper; * see note
1teaspoonGround cinnamon
¼teaspoonGround cloves

Directions

Makes 4 half-pints.

Place all ingredients in heavy pot over medium heat. Bring to a boil. Lower heat & simmer for about 20 minutes, stirring frequently. Remove from heat, cover, & let stand for about 12 hours. Again bring to a boil, lower heat & cook for 15 minutes, stirring frequently.

Process for 15 minutes in boiling water bath.
