Washington lima bean and pear casserole

1 | pounds | Dried Lima beans, washed and drained |
6 | cups | Water |
Salt and pepper to taste | ||
½ | cup | Melted butter or margarine |
1 | cup | Firmly packed light brown sugar |
2½ | cup | Pear halves, cubed |
Directions
Put beans in kettle, add water, and bring to a boil. Boil for 2 minutes, cover pan and let stand for 1 hour. Then simmer until tender; add more hot water if necessary. Drain, and season. Mix butter and brown sugar and a little syrup from pears. In a large casserole, alternate layers of beans and pears. Spread each layer with butter-sugar mixture. Top layer should be pears. Spread with remaining sugar mixture. Cover and bake in preheated slow over (325F) for about 2 hours. Makes 6 servings. Origin: Woman's Day Encyclopedia of Cookery, Volume 1, Washington Section.
